Nigel Barden Aubergine Babaganoush with Red Cabbage recipe on Radio 2 Drivetime

Nigel Barden served up tasty red cabbage and Burnt Aubergine Babaganoush that he called a ‘pampered daddy’ on Radio 2 Drivetime with Simon Mayo.

Nigel says: “This Middle Eastern inspired dish can be made individually as delicious side dishes or served together for a larger vegetarian meal.”

The ingredients are: ½ red cabbage, core removed and thinly sliced, 200ml red wine, 50g dark brown sugar, 50ml / 3½ tbsp balsamic vinegar, 2 aubergines, 1 onion, roughly chopped, 2 garlic cloves, crushed, 2 tomatoes, cut into 8 pieces, 8 pitta breads, quartered, a small bunch of fresh, flat-leaf parsley, chopped, olive oil, for frying, plus extra to serve and salt, to season.
