Leon Ockenden served up a delicious pina colada roulade dessert on This Morning.
The ingredients are: 1 pineapple, generous slosh of golden rum, 300ml double cream and 25g caster sugar.
The meringue: 30g desiccated Coconut, A slosh of rum, 275g of caster sugar, 1 heaped tsp of cornflour, 5 large egg whites and 1 tsp of cider vinegar.
For the mint sugar: Small handful of mint and 1 large tablespoon sugar.
For decoration: A small handful of mint and bash it around in a pestle and mortar, roughly chop a small handful of Glace Cherries.
