James Tanner’s meringue Christmas wreath recipe on Lorraine

James Tanner made a delicious meringue Christmas wreath as an alternative to the traditional Christmas pudding on today’s episode of Lorraine.

The ingredients are: 5 egg whites, 2 tsp cornflour, 1tsp cream of tartar, Pinch of salt, 1 tsp white wine vinegar, or lemon juice and 250g caster sugar.

To decorate: 8 figs, 120ml sherry, 1 tbsp runny honey, 1 vanilla pod, deseeded but keep the pod, 140ml double cream, 25g bitter chocolate, 1 tsp caster sugar, 16 mint leaves, to decorate and Caster sugar, to frost mint leaves.
