Brian Turner pork belly with cabbage recipe on My Life on a Plate

Brian Turner served up a tasty twice cooked pork belly dish, using Hertfordshire pork with cabbage for Michael Buerk on My Life on a Plate.

Brian designed his recipe to help bring back memories to Michael of his childhood growing up in Hereford.

The ingredients for Brian’s dish are: 1tbsp oil, 1 onion, roughly chopped, 1 carrot, roughly chopped, 1 stick celery, roughly chopped, 1 leek, roughly chopped, 2 garlic cloves, roughly chopped, 4 tomatoes, roughly chopped, 1 small bunch of thyme, 570ml chicken stock, 2tbsp soy sauce, 2tbsp Worcestershire sauce, 150ml red wine, 2tbsp clear honey, 900g pork belly, skin off and some fat trimmed but not removed, sea salt and freshly ground pepper, 75g plain flour, 2 eggs, beaten, 225g soft white breadcrumbs, 110g butter, 3 tbsp rapeseed oil, 1 medium cabbage, shredded, 2 tbsp double cream and Nutmeg.
