Paul Hollywood tutti frutti and mocha cream horns recipe on Bake Off Masterclass

Paul Hollywood make two delicious types of cream horns, one with mocha creme patisserie and the other with a tutti frutti cream filling on The Great British Bake Off Masterclass 2015.

The ingredients are: For the puff pastry: 150g strong white bread flour, chilled, plus extra for dusting, 150g chilled plain flour, pinch of salt, 2 large free-range eggs, plus extra for glazing, 250g unsalted butter, chilled and caster sugar, for sprinkling.

For the mocha crème pâtissière: 200g plain chocolate (minimum 70% cocoa solids), 400ml full-fat milk, 100g caster sugar, 4 large free-range egg yolks, 40g cornflour and 1 tbsp coffee extract.

For the tutti frutti filling: 150g double cream, 1 tbsp limoncello, 250g ricotta and 75g candied peel, chopped, plus extra for decoration.
