Paul Hollywood and Marry Berry make a delicious passion fruit and lime Charlotte russe recipe on The Great British Bake Off Masterclass 2015.
Paul says: “This oh-so-pretty pudding is wrapped in ladyfingers and contains layers of jelly and set custard decorated with fresh fruit.”
The ingredients for the savoiardi are: 3 medium free-range eggs, separated, 70g caster sugar,½ tsp vanilla extract, 60g plain flour, 1 tbsp cornflour, pinch of salt, pinch of cream of tartar and 25g icing sugar.
For the bavarois: 450ml full-fat milk,6 free-range egg yolks, 75g caster sugar, 7 leaves gelatine, soaked in cold water for 10 minutes, 200ml passion fruit purée (available from some large supermarkets) and 350ml double cream.
For the lime jelly: 2 limes, finely grated zest and juice only, 125g caster sugar, 3 sheets gelatine, soaked in cold water for 10 minutes and green food colouring.
For the decoration: 450g fresh fruit, such as strawberries.
