Simon Rimmer serves up a delicious strawberries and cream sandwich with sweet basil syrup dessert on Sunday Brunch.
The ingredients for the sandwich: 4 egg yolks, 175g sugar, 2 egg whites, 2 vanilla pods, 1/2 tsp cream tartare and 275ml cream – whipped to soft peaks.
For the syrup: 200ml water, 200g sugar and Half bunch basil.
For the fruit: 350g strawberries, 75g icing sugar, 2tsp rose water and tbs chopped mint.
