Nigel Barden Hainanese Chicken recipe on Drivetime

Nigel Barden served up Hainanese chicken on Drivetime with Sara Cox to celebrate the Chinese New Year.

Nigel served the dish with steamed brown rice and home-made Sriracha hot sauce.

The ingredients are: 2 tbsp light soy sauce, 1 tbsp sake (rice wine), 4-5 black peppercorns, 2 garlic cloves, roughly chopped, 5cm piece of fresh root ginger (peel on), washed and sliced, 3 spring onions, cut in half, salt, 1 x 1.5kg whole chicken, skin removed and fat trimmed.
