Adam’s ginger cake with banana and caramel sauce recipe on Mel and Sue

Adam make a delicious ginger cake with banana and caramel sauce served with vanilla ice-cream and fresh mint on Mel and Sue.

The ingredients are: 450g Golden Syrup, 300ml water, 225g sugar, 225ml sunflower oil, 3 large eggs, 450g self raising flour, 1tsp baking powder, 1½tsp of ground cinnamon, 1½tsp of ground ginger, 2tsp mixed spice, 1tsp bi-carbonate of soda, 3tbsp Kiddush Wine or any sweet port, a handful sliced almonds and icing sugar for dusting.

For the caramel sauce: 130g sugar, 4tbsp water, 130g double cream, 4tbsp butter and 4 thinly sliced bananas.
