Gavan blueberry cupcakes with coriander and black garlic recipe on Mel and Sue

Gavan Knox from Mr.Mom’s bakery, served up blueberry cupcakes with coriander and black garlic on Mel and Sue.

The ingredients for the blueberry compote filling: 200g fresh blueberries, 50g caster sugar, 3 tbsp water and 1 tsp lemon juice.

For the cupcakes: 80g unsalted butter, softened, 240g plain flour, 280g caster sugar, 1 tbsp baking powder, ½ teaspoon salt, 2 large eggs, 240ml whole milk, 1 tspn vanilla extract, 200g fresh blueberries, 5 cloves black garlic, chopped and 1 ½ tbsp coriander seed.

For the Limoncello frosting: 300g icing sugar, 150g salted butter, softened, 30ml whole milk and 2 tbsp Limoncello, (or lemon juice for kid-friendly).
