Gino D’Acampo serves up slow cooked beef brisket for the festive season on Let’s Do Christmas.
The ingredients are: 3 tbsp olive oil, 2 kg beef brisket and 3 red onions, sliced.
For roasted root veg: 1 butternut squash, 3 red onions, cut into 8 each, 3 courgettes, cut into 3 cm chunks, 3 tbsp Olive oil, A few chilli flakes, A few sprigs of rosemary, 4 cloves garlic, lightly bashed and 3 tbsp balsamic vinegar.
For the Italian herb sauce: 1 tbsp capers, drained, 1 clove garlic, 2 anchovies, 25g parsley, A few sprigs of tarragon, A few sprigs of mint, Olive oil, A little lemon juice and Salt and pepper.
For the British blackberry sauce: 25g butter, 1 shallot finely diced, 100ml port, 100ml red wine, 100ml good quality beef stock, 1 tbsp blackberry jam, 25g butter, a handful of blackberries and Salt and pepper.
