Gino makes salmon coulibiac pie from a Russia recipe on Let’s Do Christmas with Gino and Mel.
A coulibiac is a type of Russian pie usually filled with salmon or sturgeon, rice or buckwheat, hard-boiled eggs, mushrooms, onions, and dill. The pie is baked in a pastry shell, usually of brioche or puff pastry.
Mel says: “This is a perfect dish for a Christmas Eve dinner that is absolutely delicious.”
The ingredients are: 600g salmon fillet, 75g butter, 75g basmati rice, 200ml fish stock, 125g chestnut mushrooms, 1 onion, 50g butter, 1 tbsp thyme leaves, 2tbsp chopped parsley, 2 x sheets of puff pastry, 100g cream cheese, 1 egg, beaten, 10ml fish stock, 250ml cream and 1 tbsp dill and Zest of 1 lemon.
