Simon Rimmer crispy chickpea salad recipe on Daily Brunch

Simon Rimmer serves up crispy chickpea salad on Daily Brunch with special guest Melanie C. from The Spice girls.

The ingredients are: 1 can chickpeas, washed, 125g flour, seasoned, 150g yoghurt, 175g polenta, mixed with 1 tbsp chilli flakes, 1 tbsp chilli flakes, 200ml oil, to deep fry, 200g feta cheese, 100ml extra virgin olive oil, 1 lime, the zest and juice, 1 cucumber, cut into deseeded half moons, 200g baby tomatoes, 1 handful watercress and 1 bunch mint leaves , 20 leaves.
