Tom Kerridge serves up proper tomato soup with pesto and basil oil on Tom Kerridge’s Best Ever Dishes that is an ideal winter warmer.
The ingredients for the soup are: 50g butter, 1 onion, peeled and sliced, salt and freshly ground black pepper, 2 fresh red chillies, finely chopped, 4 garlic cloves, peeled and grated, 100g caster sugar, 250ml red wine vinegar, 2kg ripe plum tomatoes, roughly chopped, 2 thick slices white bread, roughly torn, large bunch fresh basil, plus extra leaves to garnish and 1 tsp cayenne pepper.
For the pesto: large bunch fresh basil. 2 garlic cloves, peeled and grated, 50g pine nuts, 50g parmesan, grated, salt and freshly ground black pepper and 150ml olive oil.
For the basil oil: ice water, large bunch fresh basil leaves, 150ml olive oil and pinch salt.
