Gino D’Acampo cooks trofie pasta with rustic pesto, green beans and potato on Gino’s Italian Escape: A Taste Of The Sun.
This week Gino visited the Northwest Italy and made his way to the picturesque region of Liguria, where the coast meets the mountains and produced a couple of wonderful recipes.
Before he left Liguria, Gino rustled up one of the region’s most popular dishes, trofie pasta with rustic pesto, green beans and potato.
Trofie is a short, thin, twisted pasta that is shaped by rolling a small piece of dough on a flat surface to form a short, round length of pasta with tapered ends, then twisting it to form the final shape.
As the evening sun sets over the coast, Gino shared all of his delicious dishes with the friends he’s met during his time in Liguria.
Gino’s recipe is available in his new book:A Taste of the Sun: Gino’s Italian Escape (Book 2) available at Amazon.
