Kitty Hope and Mark Greenwood make lemon and blueberry nougat on Sweets Made Simple.

The duo says: “This is a white nougat similar to torrone. It’s laden with candied peel and blueberries, chewy rather than hard, with a crisp rice-paper base.”

The ingredients are: 400g granulated sugar, 100ml clear honey, 50ml liquid glucose, large egg whites, at room temperature, pinch of salt,50g candied lemon peel, chopped, 75g flaked almonds, toasted, 75g dried blueberries, 40g white chocolate chips and handful of fresh blueberries, to scatter over the top.
