Bill Granger serves up prawn skewers with garlic and parsley recipe on Lorraine for a great summer dish.
The Ingredients are: 4 tbsp olive oil, 5 garlic cloves, crushed, 2 small red chillies, seeded and finely chopped, 2 tsp grated lemon zest, 2 tbsp chopped fresh flat-leaf (Italian) parsley and 20 large raw prawns, peeled and deveined, tails left intact.
To prepare the dish, mix the olive oil, garlic, chilli, lemon zest and parsley in a large non-metallic bowl. Add the prawns and stir to coat them well, then cover the bowl and refrigerate for 30 minutes.
Preheat a char grill pan or barbecue to high heat. Thread each prawn onto a skewer and cook for 2 minutes on each side, or until they are lightly charred and just cooked through.
