Ainsley Harriott served up a delicious Courgette, Orange and Thyme Cake on Ainsley’s Fantastic Flavours.
The ingredients are: 350 g courgettes (finely grated), 200 g soft light brown sugar, 200 ml sunflower oil, 3 large eggs, 1 large orange (zested and juiced), 1 tsp vanilla extract, 100 g sultanas (optional), 110 g self-raising wholemeal flour, 175 g self-raising white flour, 1 tsp bicarbonate of soda, 1 tsp baking powder, 1 tsp fresh thyme leaves (finely chopped), 1/2 tsp ground nutmeg and 25 g chopped walnuts.
For the Orange Drizzle / Glaze: Juice of 1-2 oranges, 75-100 g caster sugar and A few fresh thyme sprigs (for decorating).
