Simon Rimmer Pad Kra Pao (spicy Thai fried chicken with fried egg and rice) recipe on Sunday Brunch

Simon Rimmer served up a tasty Pad Kra Pao (spicy Thai fried chicken with fried egg and rice) on Sunday Brunch.

The ingredients are: 350g minced chicken, 5 small green chillies, 2 cloves of garlic, Handful Thai basil, 125g of fine beans, cut into small pieces, 3 spring onions, finely sliced, 25ml each soy sauce and oyster sauce, Teaspoons of fish sauce, 50ml of water, 1 tablespoon of sugar and 2 eggs.

For the seasoning: 25ml fish sauce, juice of 1 lime, 1 finely chopped green chilli, clove grated garlic.

Serve with jasmine rice.
