Simon Rimmer Courgette Frittata with Tomato salad recipe on Sunday Brunch

Simon Rimmer served up a tasty Courgette Frittata with Tomato salad on Sunday Brunch.

The ingredients are: 1 courgette, thinly sliced (mandolin ideally), 2 cloves garlic, 2 sp onions, finely chopped, Tbs smoked chilli flakes, 6 eggs, beaten and 125g crumbled feta.

For the salad: about 200g halved cherry tomatoes, 50g edamame, Few torn basil leaves, Juice n zest 1 lemon, 75ml x v olive oil, Tsp sugar, Satl and pepper.
