Simon Rimmer Courgette and Lime Cake recipe on Sunday Brunch

Simon Rimmer served up a delicious Courgette and Lime Cake with pistachios on Sunday Brunch.

The ingredients are: 100g pistachios, shelled and blitzed until smooth, 300g plain flour, 220g sugar, 1/2 tsp bicarbonate of soda, 2 tsp teaspoons baking powder, 100ml vegetable oil, 4 eggs, 90g full fat Greek yoghurt, 1 lime. zest and juice, 250g courgettes, coarsely grated, 175g icing sugar and 2 limes, zest and juice.

Garnish: Handful chopped pistachios.
