Simon Rimmer Mixed Tomato Salad recipe on Sunday Brunch

Simon Rimmer served up a tasty Mixed Tomato Salad on Sunday Brunch.

The ingredients are: 1 x baguette, cut in half, then cut into 2 (so 4 pieces), 2 cloves garlic, 2 plum tomatoes, pureed, Extra virgin olive oil and Salt.

For the Pickled tomatoes : 1 Tsp chilli flakes, 150g sugar, 75ml red wine vinegar, 75ml water, 1 Tsp celery salt, 12 peppercorns, 2 cloves garlic, 24 cherry tomatoes, halved, Half red onion, very thinly sliced, 2 beef tomatoes, peeled, then cut into circles, then halved, Zest and juice 1 lemon, 1 Tsp salt, 1 Tsp sugar, 12 sun dried tomatoes, halved and 400g tin butterbeans, drained.

Lemon balm to garnish.
