Rustie Lee jambalaya sunshine rice with chicken, prawns and sausages recipe

Rustie Lee served up a tasty jambalaya sunshine rice with chicken, prawns and sausages on this morning.

The ingredients are: 1 tbsp olive oil , 1 onion, chopped, 1 red pepper, chopped , 3 celery sticks, chopped, 600g chicken fillet strips , 2 garlic cloves, chopped , 1 tsp salt, Pinch cayenne, 250g Chorizo or Andouille sausage, sliced , 1 can diced tomatoes , 475ml chicken stock , 315g long-grain rice, 1 tbsp paprika, 1 tbsp oregano, 1 – 3 tsp cayenne pepper (optional for extra heat), 310g raw jumbo prawns , Salt and pepper, to taste.

To garnish: 2 spring onions, sliced and Fresh parsley, chopped.
