Becky Excell cornflake fish fingers with mushy peas and tartare sauce recipe

Becky Excell served up tasty air fryer cornflake fish fingers (gluten-free cod goujons) with mushy peas and tartare sauce on this morning.

The ingredients for the goujons are: 5 tbsp cornflour, 1 tsp salt, ½ tsp white or black pepper, 2 medium eggs, 140g gluten-free cornflakes, 2 skinless cod fillets (not too chunky) and Oil in a spray bottle, for frying.

For the tartare sauce: 200g mayonnaise, 1 tsp dried parsley, Zest of ½ lemon, 2 tbsp chopped capers, 2 tbsp chopped gherkins and 1 tsp garlic-infused olive oil.

To serve: Mushy peas and Chips.
