Si and Dave’s poached John Dory with herbs and sparkling wine recipe on The Hairy Bikers Go West

Si King and Dave Myers served up tasty poached John Dory with herbs, sparkling wine, broad beans, capers, parmentier potatoes and a butter and cream sauce on The Hairy Bikers Go West.

The ingredients are: 3 sprigs tarragon, bruised, 3 sprigs parsley, bruised, 300ml champagne, 4 John Dory fillets, salt and freshly ground black pepper.

For the sauce: 50g butter, 1 shallot, very finely chopped, 75ml/5 tbsp double cream, 1 tbsp finely chopped tarragon, 1 tbsp finely chopped parsley and few lemon thyme leaves.

For the garnish: 500g broad beans (150g when podded and skinned), 1 tbsp olive oil, 50g capers, drained and ½ lemon, zest only.
