Cyrus Todiwala Ginger Shepherd’s Pie with double cream, red chillies and tomatoes on James Martin’s Saturday Morning.

The ingredients are: 2 tsp ground cumin, 2 tsp ground coriander, 250ml warm water, 1 tsp cumin seeds, 2-3 large floury potatoes, 100ml double (heavy) cream, Butter – to taste, 1 whole egg, Salt, to taste, 2 tbsp sunflower or rapeseed oil, 2 x 5cm pieces of cinnamon stick, 2-3 whole dried red chillies, broken into pieces and deseeded, 2 red onions, finely chopped, 10cm piece of fresh ginger, finely chopped, 2 garlic cloves, finely chopped, 500g lean minced (ground) lamb, 2 tomatoes, chopped and 8-10 sprigs of coriander (cilantro), chopped.
