Rick Stein served up a tasty chuck steak and stout pie with shortcrust pastry, celery, carrots and mushrooms on Rick Stein’s Food Stories.
The ingredients are: 1kg aged chuck steak, cut into 3cm cubes, 20g plain flour, 60g lard, 2 onions, sliced, 2 celery sticks, sliced, 2 carrots, peeled and sliced, 2 tbsp tomato puree, 500ml stout, 200ml beef stock, 200g chestnut mushrooms, thickly sliced, 1 tbsp soy sauce, 1–2 tsp sugar, 3 bay leaves, 3 thyme sprigs, salt and freshly ground black pepper, 1 free-range egg, beaten.
For the shortcrust pastry: 200g plain flour, plus extra for rolling out, ½ tsp salt, 50g very cold butter, cubed, 50g very cold lard, cubed and 2 tbsp ice-cold water.
