Rosemary Shrager Christmas cake recipe on Steph’s Packed Lunch

Rosemary Shrager and Steph McGovern served up a delicious Christmas cake on Steph’s Packed Lunch.

The ingredients are: 1.3kg mixed dried fruit (sultanas, raisins), 225g dried glace cherries, 110g candied peel, 200ml dark rum, plus extra to feed, 455g unsalted butter, 30g lard, 225g caster sugar, 225g light soft brown sugar, 8 medium eggs, 1 tbsp treacle, 510g plain flour, 1 tsp fine salt, 1 tsp baking powder, 110g ground almonds, 1 tbsp mixed spice, 1 tsp grated nutmeg and 1 tsp ground cinnamon.
