James Martin roasted cod with Thai green curry recipe on James Martin’s Saturday Morning

James Martin served up tasty roasted cod fillets with Thai green curry on James Martin’s Saturday Morning.

The ingredients are; 1 kg cod and1 x 400g coconut milk.

For the shrimp paste. 200g prawns and 50ml sesame oil.

For the green paste: 1 x 10cm piece of fresh ginger or galangal, 5 garlic cloves, 1 bunch of coriander, 2 tbsp shrimp paste from above, 2 green chillies, 2 lemongrass, 4 kaffir lime leaves, 1 shallot, peeled and diced.

To finish: 100g baby spinach, 1 bunch of coriander and 2 bunches of basil.
