Simon Rimmer lamb moussaka with aubergines and tomatoes recipe on Steph’s Packed Lunch

Simon Rimmer served up a tasty lamb moussaka with aubergines and tomatoes on Steph’s Packed Lunch.

The ingredients are: 3 sliced aubergines, cut lengthways, 4 tbsp olive oil, 500g lamb mince, 2tbsp olive oil, 1 onion, peeled and sliced, 3 cloves garlic, peeled and chopped, 2 tbsp tomato puree, 300ml passata, 2 cinnamon sticks and 2 tsp dried oregano.

For the topping: 500g Greek yoghurt, 3 medium free-range eggs, 80g pecorino, grated and 1 tsp grated nutmeg.
