Simon Rimmer served up tasty mushroom cake with caper mayonnaise on Sunday Brunch.
The ingredients are: 200g mashed potato, 400g shredded oyster mushrooms, Zest half lemon, Half diced onion, Clove garlic, grated, 75g butter, 75ml soy, 100g flour, 2 beaten eggs, 250g brioche crumbs, 225g mayonaise, 50g capers, 1 tablespoon dill, 1 tablespoon parsley and 1 tablespoon vinegar.
