Nadiya Hussain smoky aubergine pizza with burrata cheese and coriander oil recipe on Nadiya’s Simple Spices

Nadiya Hussain served up a tasty smoky aubergine pizza with burrata cheese and coriander oil on Nadiya’s Simple Spices.

The ingredients for the dough are: 500g strong white bread flour, plus extra for dusting, 7g fast-action yeast, 1 tsp sugar, 1 tsp salt, 4 tsp olive oil, For the topping, 1 large aubergines, 6 garlic cloves, crushed, 1 tbsp ground cumin, 6 anchovy fillets, 3 tbsp mayonnaise, 2 tsp chilli powder and 2 x 150g burrata.

For the coriander oil: 200ml vegetable or olive oil, large handful fresh coriander and pinch of salt.
