John Whaite served up a delicious banana cake with brown butter frosting on Steph’s Packed Lunch.
The ingredients for the frosting are: 125g unsalted butter, diced, 100g icing sugar and 200g full-fat cream cheese.
For the banana cake: 340g very ripe banana, 60g yoghurt or milk, 150g olive / sunflower oil, 3 large free range eggs, 340g plain flour, 300g light brown soft sugar, 1 ½ tsp bicarb, 1 tsp fine salt, 1 tsp ground cinnamon, 1 tsp ground ginger, ½ tsp ground nutmeg, ¼ tsp ground clove, 100g mixed nuts, roughly chopped and 100g white chocolate, roughly chopped.
To serve: 60g mixed nuts, chopped and 50g dark chocolate chips.
