Simon Rimmer served up a delicious burnt ricotta pie on Sunday Brunch.
The ingredients for the pastry are: 500g plain flour, 175g icing sugar, 15g baking powder, 175g butter, 2 large eggs, 1 yolk, 15ml pure vanilla and Zest 1 lemon.
For the filling: 1 kg ricotta, 1 egg, 75g sugar, 200g peach jam and juice half lemon.
For the glaze: 1 yolk and 35g icing sugar.
