Levi Roots Spatchcocked Poussins with Rum Barbecue Sauce recipe on James Martin’s Saturday Morning

Levi Roots served up tasty Spatchcocked Poussins with Rum Barbecue Sauce on James Martin’s Saturday Morning.

The ingredients are: Juice of 1 lime, 4 spatchcocked poussins, Sunflower or groundnut oil, 1 onion, finely chopped, 2 garlic cloves, finely chopped, 2cm piece of root ginger, finely chopped, 1 tbsp allspice berries, crushed, ½ red chilli, deseeded and finely chopped, 80ml tomato ketchup, 227g can tomatoes, 85g molasses sugar, 40g light brown sugar, 150ml white wine or cider vinegar and 150ml dark rum.
