Simon Rimmer served up a delicious peach and coffee cake on Sunday Brunch.
The ingredients are: 150g butter, 150g sugar, 3 eggs, 1 vanilla pod, Zest 1 lemon, 175ml sour cream, 250g flour, 1 teaspoon baking powder, 50ml strong espresso, 1 teaspoon bicarbonate of soda and 225g peaches, chopped, tossed in a little flour.
For the topping: 50g sugar, 75g light brown sugar, 1 teaspoon ground cinnamon, 1 teaspoon powdered coffee, 125g butter, cubed and 225g flour.
