Simon Rimmer served up tasty chickpea and roasted veg traybake on Sunday Brunch.
The ingredients are: Tin 400g chick peas, drained and rinsed, 2 red onions, cut into wedges, 1 aubergine, cut into large chunks, 1 red and one green pepper, cut into large pieces, 3 cloves sliced garlic, 1 teaspoon chilli flakes, 150g kale, Head of cauliflower cut into florets, Zest 1 lemon, 1 teaspoon salt, 130ml olive oil, 1 tablespoon smoked paprika, 125ml red wine vinegar, 1 teaspoon salt, 3 garlic cloves, 1 finely diced shallot, 1 red chilli, chopped, Bunch chopped coriander (including stem), Half bunch chopped parsley, 1 tablespoon chopped oregano and 1 tablespoon chopped mint.
