Simon Rimmer served up a delicious apple cider cake on Sunday Brunch.
The ingredients are: 150g melted butter, 75g sour cream, 4 apples, 330ml french cider, reduced by 2/3, 150g soft dark brown sugar, 2 eggs, 300g plain flour, 2 teaspoon baking soda, 1 teaspoon mix spice, 1 teaspoon cinnamon, Pinch grated nutmeg, 200g golden sultanas and 100g chopped pecans.
To serve – 250g mascarpone, splash cream and teaspoon ground cinnamon.
