Monica Galetti served up tasty Baked Aubergine, Whipped Feta and Chickpeas with Rosemary Honey on James Martin’s Saturday Morning.
The ingredients are: Aubergine.
For the Whipped Feta; 200g Feta and 100g Greek yoghurt.
For the Crispy Chickpeas: 1 Tinned Chickpeas, Sweet Paprika, Olive oil and Chopped Rosemary and Thyme.
Pickled Radishes: Radishes and White Balsamic Vinegar.
to Garnish: Rosemary Honey to finish, Micro Parsley and Coriander, Lemon Zest, Cornflowers and Bronze Fennel.
