Simon Rimmer served up tasty beef cheeks in mole sauce and rice on Sunday Brunch.
The ingredients are: 25g sesame seeds, 2 teaspoons coriander seeds, 12 black peppercorns, 1 teaspoon cumin seeds, Half teaspoon allspice, Half teaspoon marjoram, Half teaspoon thyme, 4 trimmed beef cheeks, 1 cinnamon stick, 4 cloves garlic, 80g dark choc, chopped,3 sliced onions, 2 ancho chillies, soaked in water, 1 tablespoon golden raisins, Tin chopped toms and 500ml strong beef stock.
Serve with long grain rice tossed in butter, parsley and lime zest.
