Freddy Forster Fish Finger and Caper Mayo Wrap recipe on Steph’s Packed Lunch

Freddy Forster served up tasty Fish Finger and Caper Mayo Wrap on Steph’s Packed Lunch.

The ingredients for the fish fingers are: Pinch of turmeric, Few leaves of coriander, chopped, 2 medium free-range eggs, beaten, 200g panko breadcrumbs, 100g plain flour, 250g of fresh salmon, skinless and cut into strips and Vegetable oil.

For the wrap: 2 tbsp of mayonnaise, ¼ cucumber, finely sliced, 50g white cabbage finely sliced, 50g red cabbage, finely sliced, 100g pineapple, finely sliced, Few slices thinly sliced red chilli, Few leaves of coriander, ½ tsp chopped capers, Squeeze of lemon juice and 2 x tortilla wraps, slightly warm.
