Simon Rimmer served up a tasty courgette cakes with poached eggs, crispy bacon and maple syrup on Sunday Brunch.
the ingredients are: 2 grated courgettes, 2 eggs, 125g drained ricotta, 30g grated smoked cheddar, 1 teaspoon onion powder, 1 teaspoon chilli flakes and 2 finely chopped spring onions.
Top with poached eggs, crispy streaky bacon and maple syrup.
