Simon Rimmer deep fried apple pie recipe on Sunday Brunch

Simon Rimmer served up a delicious deep fried apple pie on Sunday Brunch.

The ingredients are: 8 x rectangles from 2 ready rolled puff pastry 8x12cm and Egg wash.

For the filling: 300g finely chopped pink lady apple, 100ml water, Zest and juice half lemon, Tsp vanilla paste, 60g soft light brown sugar, 30g butter, Tbs cornflour, Half tsp cinnamon, Half tsp ginger and 100g sugar mixed with tbs cinnamon.

For the dip: 150g mascarpone, 75g caramel sauce and Handful toasted flaked almonds.
