Theo Michaels mushroom stack with King oyster mushrooms, peppercorn sauce and onion rings recipe on Steph’s Packed Lunch

Theo Michaels served up the ultimate mushroom stack with King oyster mushrooms, peppercorn sauce and tempura onion rings on Steph’s Packed Lunch.

The ingredients for the onion rings are: 1 onion, peeled and cut into thin rings, 100g cornflour, 75g plain flour, 250ml sparkling water and 250ml vegetable oil, for frying.

For the mushroom steak: Splash olive oil, 4 sprigs fresh rosemary, left whole, 2 cloves garlic, peeled and left whole, 8 King Oyster mushrooms, sliced 1 inch thick lengthways and scored crisscross on both sides and 40g unsalted butter.

For the peppercorn sauce: Mushroom offcuts, diced, 80ml brandy/cognac, 200ml vegetable or beef stock, 120ml double cream and 2tsp freshly crushed peppercorns (black for hot or green/red for a milder heat).

To serve: Mashed potato and Steamed green beans or side salad.
