Freddy Forster lamb kofta with cucumber and mint dressing recipe on Steph’s Packed Lunch

Freddy Forster served up tasty lamb kofta with cucumber and mint dressing on Steph’s Packed Lunch.

The ingredients are: 450g minced lamb, ¼ tsp ground cumin, ¼ tsp dried chilli, Good pinch of cinnamon, Good pinch of sumac, ¼ tsp dried thyme, 2 tbsp coriander, roughly chopped, 1 whole medium free-range egg, 75g fresh breadcrumbs and 2 tbsp olive oil.

For the cucumber and mint dressing: ¼ cucumber, cut into small dice, ½ red onion, peeled and finely diced, 150g feta cheese, crumbled, 2 plum tomatoes, small diced, 2 tbsp fresh mint, roughly chopped, ¼ tsp dried oregano, 250ml extra virgin olive oil, 2 tbsp water, ¼ garlic clove, peeled and finely chopped, Juice of ½ lemon and 1 tbsp green olives, roughly chopped.

For the giant couscous: 200g giant couscous, Drizzle of olive oil and 1 red chicory, roughly chopped.
