Freddy Forster deep fried croissant with ice cream and jam recipe on Steph’s Packed Lunch

Freddy Forster served up delicious deep fried croissants with ice cream, jam and mixed berries on Steph’s Packed Lunch.

The ingredients are: 4 medium sized all butter croissants, 4 tbsp strawberry or blackberry jam, 500g tub of vanilla ice-cream, 100g plain flour, 5 tbsp maple syrup, 1 large free-range egg, 250g crushed cornflakes, 150g desiccated coconut, 50g caster sugar, ½ tsp cinnamon, Icing sugar, for dusting and 4 sprigs of mint, to serve.

For the warm mixed berries: 200g frozen mixed berries and 50g demerara sugar.
