Freddy Forster beef and vermicelli noodle salad recipe on Steph’s Packed Lunch

Freddy Forster served up a tasty seared beef and vermicelli noodle salad for the summer on Steph’s Packed Lunch.

The ingredients are: 150g piece of sirloin steak, batted out , Pinch smoked paprika , 1 tbsp vegetable oil , 100g cooked rice vermicelli noodles , 50g beansprouts, blanched, 25g raw carrots, peeled and thinly sliced , ½ red chicory, finely sliced , ½ red onion, finely sliced , ½ red pepper, finely sliced , 1 tbsp coriander leaves , A few leaves of basil and 1 tbsp toasted sesame seeds.

For the dressing: 25ml vegetable oil , 3 tbsp sesame oil , 1 tbsp runny honey , ½ tsp sesame seeds, toasted , 1 tsp fresh ginger, peeled and finely chopped , 1 tbsp coriander leaves, 2 tbsp tahini paste , 1 ½ tbsp cider vinegar , Juice of 1 lime , Salt and pepper, to taste.
