Simon Rimmer super ribs with BBQ sauce and potato salad recipe on Sunday Brunch

Simon Rimmer served up super ribs with BBQ sauce and potato salad on Sunday Brunch.

The ingredients are: 1kg baby back ribs, sinews removed, 1 tablespoon smoked paprika, 1 tablespoon dark brown sugar, 1 tablespoon garlic powder, 2 teaspoons salt and 125ml apple juice.

For the BBQ sauce: 300g tomato ketchup, 4 tablespoons red wine vinegar, 75g dark brown sugar, 3 tablespoons honey, 2 teaspoons tamarind sauce, 1 teaspoon English mustard, 1 teaspoon smoked paprika and 2 teaspoons red miso.

For the potato salad : 750g cooked new spuds, lightly crushed in your hand, 50g salad cream, 100g mayo, 1 tablespoon yellow mustard, 6 chopped spring onions, 1 teaspoon chilli flakes, 2 teaspoon cider vinegar and 1 tablespoon chopped parsley.
