Rustie’s spicy jerk chicken kebabs with fried dumplings and pineapple coleslaw recipe on This Morning

Rustie Lee served up tasty Caribbean style spicy jerk chicken kebabs with fried dumplings and pineapple coleslaw on This Morning.

The ingredients for the Johnny Cakes (dumplings): 450g self raising flour, 50g butter, 1 tsp sea salt, 1 tsp baking powder, 250ml water and Oil for deep frying.

For the jerk seasoning: 1 tbsp allspice, 1 tbsp chilli powder, 1 tbsp paprika, 2 tsp cinnamon, 1 tsp salt, 1 Scotch Bonnet pepper, ½ red pepper, chopped, ½ green pepper, chopped, 1 bay leaf, 1 medium onion, chopped, 6 cloves garlic and 180ml olive oil.

For the chicken kebabs: 4 chicken breasts and Jerk seasoning (as above).

For the pineapple slaw: 1 white cabbage, 1 medium pineapple, 1 medium red onion, Juice of 1 lemon, Grated rind of half a lemon, Mayonnaise, Nutmeg, Black pepper, Salt and additional pineapple juice if needed.
