James Martin Pan Fried Mackerel with Cherry Tomatoes, Samphire and Mayonnaise recipe on James Martin’s Saturday Morning

James Martin served up tasty Pan Fried Mackerel with Cherry Tomatoes, Samphire, Tomato consommé and Mayonnaise on James Martin’s Saturday Morning.

The ingredients for the tomato consommé are: 500g ripe tomatoes on the vine, 1 shallot peeled, 1 clove garlic.

For the mackerel: 4 mackerel fillets, butterflied and Knob of butter.

For the samphire: 100g samphire cooked in 2 tbsp of the above tomato consomme recipe for 1 to 2 minutes, Cherry Tomatoes and 8 Cherry tomatoes, halved.

for the Mayo: 3 egg yolks, 1 tbsp white wine vinegar, 1 tbsp Dijon mustard, 200ml veg oil and 2 tbsp tomato consomme.
